Good Morning.

Are you up and ready for this Wednesday morning, I am up but I am not ready to even attempt to write a journal. We were real busy all day yesterday into the night and we did not have time to make a thought of the day Video. We are doing some work on interior doors, refinishing an such and you know that is hard work, one good thing is that we have an exlecent contractor.

That looks good to Dad, I notice that there are to be a few 67 degrees says this week with plenty of sun. Now that has begun to get us all encouraged and counting the days until we will be working in the dirt.

Would it be odd for me to show you these Tomato recipes when I don't even have my plants in the ground.. I warned you that I did not know what to write about today, DAD

Sautéed Cherry Tomatoes - Serves 4
2 Tablespoon butter
1 Pint Cherry Tomatoes
¼ teaspoon salt
Dash pepper
2 Tablespoon chopped fresh basil
2 Tablespoon chopped fresh parsley
2 Tablespoon thinly sliced green onion
1 ½ teaspoon finely chopped garlic

Melt 1 Tablespoon butter in a large skillet.

Add tomatoes and salt and pepper. Sauté until skins start to split open…about 3 minutes.

Stir in parsley, basil, green onions and garlic. Cook stirring for 2 minutes.

Reduce heat to low. Add 1 Tablespoon butter. Stir to coat well. Serve immediately.

*6 GreenTomatoes *Salt and Pepper *Corn Meal *Vegetable Oil *2 Eggs, beaten Slice the tomatoes into 1/4-1/2 inch slices. Salt and pepper them to taste.Dip slices in beaten egg, then in the corn meal.Fry in hot oil about three minutes on each side until golden brown.

Very Good!Dad's Salsa

1 medium green pepper, chopped 2 celery ribs, chopped1 small onion, chopped1 medium carrot, chopped1/4 cup minced fresh cilantro or parsley2 cups fresh tomatoes, diced1/2 cup water1/2 cup tomato sauce1/3 cup tomato paste3 garlic cloves, minced 1 tablespoon lemon juice1/4 teaspoon pepper Tortilla chips In a bowl, combine the first seven ingredients. In another bowl, combine the water, tomato sauce, tomato paste, garlic, lemon juice and pepper; stir into the vegetable mixture. Serve with chips. Refrigerate leftovers. Yield: about 3 cups.

Good Morning DAD...

Another beautiful day. How quickly we forget the cold days when we are blessed with a nice sunny day. I have visitors coming for the day. Last year they came in sweaters and jackets; this year I said leave the sweaters and coats home. We should be able to sit and walk along the beach today. I wish those Rushkin tomatoes were still available for today's lunch but local tomatoes are gone until May or June. When your tomato plants arrive from burpees in a few weeks, you will have to show us step by step what you do to make them grow so healthy and plentiful.

Work around the house is always best when completed. Hope you don't have too much noise and dust in the air. A good contractor usually knows how to keep that down to a minimum. Do try to get out and enjoy that 64 degree day. The birds must be singing outside your window providing good entertainment for Prince. Have a wonderful day and SMILE.

Dear Dad, Ms. Mary and sweet Prince:

(I have a squirmelly cat on my lap, so any typos are because of her! ;) ) Glad you have a good contractor -- that is so important, I know! I have a great one out here who did a lot of work for me and I refer them to anyone locally who needs this kind of work. They do painting and roofing, and build things like gates.

Those tomato recipes sound delicious! Do you love salsa as much as I do? ;)
